This is the Mother of all classes! Crust is excited to announce a series of five separate classes that focus each on one of the French “Mother Sauces!” We invite you into our kitchen to learn all about our second “Mother Sauce,” velouté. Once you learn what this velvety velouté sauce is, you’ll realize it’s integral to so many amazing dishes, from cream of mushroom soup to pouring over roasted meats, fish, vegetables or served as a dip. There are a variety of spin off sister sauces, too, that can be made from velouté such as sauce supréme, sauce allemande, sauce aurore, sauce bonnefoy, sauce chivry, curry sauce, sauce estragon, sauce hongroise, sauce ravigote and sauce bercy.

After perfecting these classic techniques, you’ll apply your newfound skills to create a delicious, indulgent chicken fricassée from scratch!
Then, sit down to a family-style feast in our cozy restaurant, where you’ll enjoy the fruits of your labor. The meal includes pan seared halibut, a waldorf salad, an assortment of house made Crust breads served with our whipped sea salt butter, and a tart slice of classic key lime pie for dessert. Plus, we’ll toast to a job well done with a refreshing glass of white wine.

This class will be led by our kitchen’s head chef who will lead you down the path of excellent culinary instruction and advice.
Class sizes are limited so we can be in the kitchen with each student, giving them the personal time and instruction needed to learn more about artisan pie making! Our goal is to inspire your inner chef, teach you a ton about traditional cooking methods, and most importantly make sure you have loads of fun while you do it!
TAKE HOME:
Participants will leave class with the sauce bercy and chicken fricassée they made with chef. They’ll also leave with a full belly, positive experience, and favorable memories.

We understand and expect that each student will work at different speeds. We ask that you are courteous to your classmates and have patience. We have limited the class size to be sure everyone will get the time and instruction needed to have a safe and fun class!
